Gluten Free Quesadillas

This is a quick, fast and tasty side dish or light meal. These quesadillas feature products found in most local supermarkets such as Mission Corn Tortillas,  Sabra Guacomole (classic) and Perdue Simply Smart Chicken Strips.  I am certain that both adults and children will enjoy this recipe.  Here is the link to my video tutorial: https://www.youtube.com/watch?v=wUUFlWTuNWk

Homemade Gluten Free Ice Cream

Glutens are hidden in so many food products.  It can be frustrating finding a sweet treat for yourself or the family.  I make my own ice cream using a hand mixer.  It is quick, easy and gluten free.  I used strawberries in this recipe, but you can use the fruit of your choice.  This recipe only has three ingredients:  heavy cream, strawberries and vanilla extract.  I have chosen NOT to add sugar, however you can do so.  You can add one or multiple fruits. This ice cream has an old fashion ice cream taste, specifically you can really taste the cream.!  This is something that is missing from the manufactured ice cream brands sold in stores.  Here is the link to the preparation video tutorial:

Girl Scouts - Gluten Free Cookies

Schar Pizza Recipe Challenge

#ScharFrozen  I submitted three pizzas for the Schar Pizza Challenge:  Garlic & Cheese, Vegetable and Chicken, Pineapple & Peppers.  Below are the recipes and a link to the YouTube  tutorial.

Ingredients: For Pizza #1 Garlic & Cheese

1 Schar Pizza Crust

1 garlic clove (you can use less)

2 ½ cups of Mozzarella Cheese (shredded)

 ¼ cup of Extra Virgin Olive Oil

Black Pepper

Sea Salt

Prep Work:

Preheat oven at 400 degrees

Peel and chop garlic into tiny pieces

Assemble Your Pizza:

Add ¼ cups of Extra Virgin Olive Oil to pizza crust

Add Garlic

Add Pepper

Add Sea Salt

Add the Mozzarella Cheese

Place in the oven at 400 degrees for 15 minutes

Your pizza is ready to eat

Ingredients For Pizza #2 Vegetable


1 Schar Pizza Crust

 1 garlic clove (you can use less)

2 ½ cups of Mozzarella Cheese (shredded)

¼ cup of Extra Virgin Olive Oil

¼ cup of a Green Pepper

¼ cup of a Red Pepper

¼ cup of Mushrooms

¼ cup of Broccoli


Black Pepper

Sea Salt

Prep Work:

Preheat oven at 400 degrees

Peel and chop garlic into tiny pieces

Chop ¼ cup of a Green Pepper

Chop ¼ cup of a Red Pepper

Chop ¼ cup of Mushrooms

Chop ¼ cup of Broccoli

Assemble Your Pizza:

Add ¼ cups of Extra Virgin Olive Oil to pizza crust

Add Garlic

Add the Mozzarella Cheese (same a small amount)

Add the Green Pepper

 Add the Red Pepper

 Add the Mushrooms

Add the Broccoli

Add Pepper

Add Sea Salt

Add a small amount of Extra Virgin Olive Oil

Add the rest of the Mozzarella Cheese

Place in the oven at 400 degrees for 15 minutes

Your pizza is ready to eat

Ingredients For Pizza #3 Chicken, Pineapple & Peppers

1 Schar Pizza Crust

3 Pieces of Perdue Simply Smart Breaded Chicken Tenders –Gluten Free

8 ounces Tomato Sauce (homemade or can)

¼ Cup of Pineapples (fresh or can)

1 garlic clove (you can use less)

2 ½ cups of Mozzarella Cheese (shredded)

¼ cup of Extra Virgin Olive Oil

¼ cup of a Green Pepper

¼ cup of a Red Pepper

Black Pepper

Sea Salt

Prep Work:

Preheat oven at 400 degrees

Peel and chop garlic into tiny pieces

Chop ¼ cup of a Green Pepper

 Chop ¼ cup of a Red Pepper

Chop the 3 Pieces of Perdue Simply Smart Breaded Chicken Tenders Gluten Free into small pieces

Chop the Pineapples into small pieces

Assemble Your Pizza:

Add the 8 oz of Tomato Sauce to the pizza crust

Add Pepper

Add Sea Salt

Add Garlic

Add the Mozzarella Cheese (same a small amount)

Add the Green Pepper

Add the Red Pepper

Add the Chicken


Add the Pineapple

 Add the rest of the Mozzarella Cheese

Place in the oven at 400 degrees for 15 minutes

Your pizza is ready to eat

Eggo Gluten Free

#EggoGlutenFree  Eggo Waffles have ventured into the gluten free world and they are great!  I decided that would eat two boxes of these waffles (not in one sitting LOL!) before writing a product review.   The waffles are great for a quick morning meal.  They are not dry nor do they taste bland.  I had to check the box to make sure they were actually gluten free.  Kids and adults will enjoy these waffles.  The waffles toast nicely and taste great with butter and syrup.  I recommend that you give them a try.

The Mediterranean Sandwich (featuring Schar Multigrain Ciabatta Rolls)

Ingredients:

Schar Multigrain Ciabatta Rolls

Cucumber (a few slices)

4 Teaspoons of Feta Cheese

Red Onion (a few slices)

 1 cup Arugula Sabra Roasted Red Pepper Hummus 

Prep Work:

Slice ¼ of the cucumber (make thin slices) and set aside

Slice the red onion

Heat the Schar Multigrain Ciabatta Rolls for 3 – 5 minutes in the oven

Assemble the Sandwich:

Cut the Schar Multigrain Ciabatta Rolls in half

Spread the Sabra Roasted Red Pepper Hummus on both halves of rolls

Add the Arugula

Add the sliced cucumbers

Add the Feta Cheese

Add thered onions

Place the other half of the roll on top of the sandwich
