College can be an adjustment for students. It can also become a complicated adjustment when the students are custom eaters. Schools are still adjusting meal plans and snacks to meet the needs of custom eaters. As a result of this, many of the care packages marketed to the parents of incoming freshmen fail to include custom eaters. One of my followers is vegan, so I created a gluten free and vegan care package for her to take to school.

This blog post differs from my traditional posts. Most of my blogs are about gluten free cooking with an occasional product and/or eatery review. Natural hair care is extremely popular. Manufacturers of hair products are now focusing on making natural products or what they would like for the average consumer to think is a natural product. This coupled with the fact that there are an increasing number of women who are wearing wigs for many reasons. Some of these reasons are convenience, style flexibility for work, transitioning from relax to natural hair. These women come from all racial and ethnic backgrounds.

Join me at this year's Gluten Free and Allergen Friendly Expo in Secaucus, New Jersey at the Meadowlands Exposition Center (Saturday, October 14th and Sunday, October 15th). Meet the vendors of large and small manufacturing companies. This event will provide the opportunity to have conversations, provide feedback and ask questions directly to the makers of many of the products/foods that you purchase. Discover new products or existing gluten and allergen friendly products/foods. You will also have the opportunity to sample products/foods before you commit to making a purchase. Overnight oats are a quick and healthy breakfast alternative. You can prepare them nightly or make a jar for each day of the week at once. To add a bit of variety customize each jar with different fruits. They are perfect as a grab and go snack for adults and children. If you are looking to reduce your daily calorie intake, overnight oats can help you do so while eating a healthy. Overnight oats are not exclusively for breakfast. You can eat them for lunch or dinner. Think of them as a healthy option to add to your meal planning list.
I have recently become obsessed with beets! I changed beets from a childhood dislike into something that I love as an adult. I believe that my dislike had a great deal to do with the way they were prepared when I was a child. Beets were canned, placed in a pot and boiled and served at dinner time. There was no seasoning added. If you disliked beets trying preparing them different ways. Do not use the canned beets that were found in every household in the 70s and 80s. If you do not want to go through the long process of boiling, peeling and chopping fresh beets, you can purchase whole or chopped beets from stores such as Shoprite and Whole Foods. Serve them as a side dish hot or cold. Add beets to your favorite salad. In addition to adding a pop of color, they have a significant amount of nutritional value. Beets contain Vitamin C, Iron and Magnesium, and a very good source of Dietary Fiber, Folate, Potassium and Manganese.
My skin goes through a transition when the seasons change! I have an oily t-zone. In the winter my skin is dry. In the summer it becomes extremely oily. I also have outbreaks of small bumps when the weather is warm. If you are experiencing similar problems, you know how frustrating this can be.
What is the solution? It can be found in what I drink and eat. I am trying to drink more water and eat less sugar. I am trying to ensure that I receive the full daily serving of vegetables. Is this difficult to do? Absolutely yes. It can be hard to maintain a food discipline when there are so many tempting things to eat. I am trying to incorporate summer fruits as sweets and I am looking for other healthier options to snack on during the day.
I also think it is time to change my skin care products. I have summer and winter products along with a few that overlap seasons. Summertime requires a lighter approach to skin care. Heavy products clog the pores.
Also remember that you should protect your skin with sun block. Most important enjoy the summer weather!
Potatoes can be so boring and very predictable. Let’s be honest, it is difficult to be creative with side dishes after work or on the weekends. Creamy scalloped potatoes are perfect. The kids love cheese and potatoes. Combine the two for this easy to make side dish. I added onions and peppers to break-up the cheese flavor and to introduce a different taste. This side dish can be paired with fish, chicken or beef. Add a salad and your meal is ready to serve.
