![]() #June FunFood Never underestimate the power of Tomatoes. Tomatoes are a rich source of vitamins A and C and folic acid. Tomatoes contain a wide array of beneficial nutrients and antioxidants, including alpha-lipoic acid, lycopene, choline, folic acid, beta-carotene and lutein. As plant food consumption goes up, the risk of heart disease, diabetes, and cancer goes down. High fruit and vegetable intake is also associated with healthy skin and hair, increased energy and lower weight. Increasing consumption of fruits and vegetables significantly decreases the risk of obesity and overall mortality. According to the American Cancer Society, some studies have shown that people who have diets rich in tomatoes may have a lower risk of certain types of cancer, especially cancers of the prostate, lung, and stomach. Choline is an important nutrient found in tomatoes that helps with sleep, muscle movement, learning and memory. Choline also helps to maintain the structure of cellular membranes, aids in the transmission of nerve impulses, assists in the absorption of fat and reduces chronic inflammation. Tomatoes also come in a variety of colors red, orange, yellow and green. They are healthy, have great taste and can make any dish look attractive . source: http://www.medicalnewstoday.com/articles/273031.php XOXOXOX Dawn ![]() #JuneFunFood I am always looking for a way to change things up by cooking something different for the family. Now that the weather is getting warmer, no one wants to be in front of the stove. I prepared two recipes one baked an the other fried. Both are great for those evenings when you want to eat a whole bunch of appetizers as a meal (yummy) or for entertaining friends on baseball night or soccer Saturdays. Remember it's best to wear gloves when handling the jalapenos. The seeds and the juice are extremely spicy. Also if the seeds and juice make contact with you eyes it will BURN!!! However the best time to eat them is during the summer and the fall. Stringbeans contain several vitamins such as K, C, A, B1, B2, B3, Iron, Folate, Calcium and Potassium. In addition to being a dietary fiber, they contain Omega 3 Fatty Acids. Stringbeans are incredibly low in calories. They are great as a cooked side dish, in a salad or as a snack between meals. When purchasing fresh stringbreans look for a bright green color. Avoid stringbeans with dark marks and blemishes. If all else fails, listen for the snapping sound that the stringbean makes when broken as an indicator of its freshness. Look at the picture included with this post. These stringbeans are from my local farmers' market. They look so wonderful. Don't miss out on this June fun food XOXOXOX Dawn ![]() I am not a great fan of pears! In fact I find them a difficult fruit to eat. I am always uncertain as to where I should take the first bite. Should I bite the lean top or the plump bottom? After many years of my great pear eating mystery, I found a solution to my problem with this recipe for poached pears in Riesling. I used my farmers' market fine. The white Riesling wine from Venti Vines, Bosc Pears, a vanilla bean, brown sugar and 3.5 cups of water. In under 3 hours I had this wonderful dessert. The combination of the Riesling, pears and vanilla bean has an aromatic flavor and the taste is so wonderful. You don't have to take my word, try it for yourself: https://youtu.be/f8Rxtm5Qdsc XOXOXOX Dawn ![]() I purchased this baby lavender plant at the farmers’ market last week. I love lavender! I am going to grow this plant in an indoor garden, so I can enjoy its beauty. To some this may seem strange since lavender is a very trendy herb with numerous uses. Historically lavender is grown for commercial use. Specifically for producing essential oil to be used in balms, salves, fragrances, perfumes, bath products, topical creams and lotions. The flowers of the lavender plants are also used as a cake decoration. Lavender is a popular tea blend. It is frequently combined with green, black an herbal teas. I personally love lavender for its aromatherapy properties. Placing a few drops of pure lavender oil on your pillow case can help you to relax at night. Rubbing a small amount of pure lavender oil behind both ears and on your temple can aid in relieving a headache. Lavender plants do not require a lot of attention. A little water and a lot of sunlight is all you need. Sunlight aids in the releasing of the plants fragrance. Lavender looks pretty, smells wonderful and most of all it is gluten free.
