![]() It is that time of year again! Spring is here. I am always looking for a way to avoid cooking the same dishes, but I want eat healthy. I roasted chicken breasts for dinner. I had leftovers (one breast). This definitely was not enough for a two night meal and did not want to trash the one breast. The good news is that leftovers make excellent brown bag lunches. I converted my lone roasted chicken breast into a delicious gluten free chicken salad. The recipe is simple: roasted chicken breast, part of a red onion, one sweet pepper and mayonnaise. I complimented my chicken salad with Glutino's Gluten Free Crackers. I love this salad. I hope you will enjoy.
