Home Garden Series: Sweet Potato Plant

It is hard to believe that this plant is from a sweet potato that was growing roots. In the spring, I purchased a couple of sweet potatoes at Whole Foods with the intention of baking them for dinner during the week.  Although my intentions were good, one of the sweet potatoes never made it into the oven.  However instead of wasting an organic sweet potato, we decided to plant it in our family garden.  This video discusses this plant in detail.

Unsweetened Homemade Iced Tea

Ice tea does not have to be sweetened or plain.  You can enjoy homemade iced tea while enhancing it's flavor with almost anything.  I made two quarts of iced tea using a quick and simple recipes.

Recipe #1  32 Ounces of Lavender Lemon Iced Tea

In a pitcher, glass or plastic jar place:
-1 stem of a Lavender Plant (I used a cutting from my garden)
-1 Lemon ( half of a slice - you can alter to your preference)

In a heat resistant bowl or jar:
-Place 3 Lipton Black Tea Bags (or me if you want a stronger tea  (in hot water) and set aside for 1 hour

Combine ingredients
Pour the tea into the pitcher glass or plastic jar with the stem of Lavender plant and half a slice of Lemon
-Allow the mixture to cool and place in the refrigerator
-Refrigerate for 2 to 3 hours
-Enjoy your unsweetened Lavender Lemon Iced Tea

Recipe #2  32 Ounces of Orange Mint Lemon Iced Tea

In a pitcher, glass or plastic jar place:
-1 stem of a Orange Mint Plant (I used a cutting from my son's garden, but you can buy fresh mint from the store)
-1 Lemon ( half of a slice - you can alter to your preference)

In a heat resistant bowl or jar:
-Place 3 Lipton Black Tea Bags (or me if you want a stronger tea  (in hot water) and set aside for 1 hour

Combine ingredients
Pour the tea into the pitcher glass or plastic jar with the stem of Orange Mint plant and half a slice of Lemon
-Allow the mixture to cool and place in the refrigerator
-Refrigerate for 2 to 3 hours
-Enjoy your unsweetened Orange Lemon Iced Tea

Please note: I did not use sugar, a sugar substitute or honey in these recipes.  However if you do not like the taste of unsweetened iced tea, please feel free to add the sweetener of your choice.

Birch Benders Pancake & Waffle Mix

Birch Benders has a line of pancake and waffle mixes.  I discovered and use three of the products. All three of these mixes are gluten free Gluten Free, Paleo and Keto. I noticed that the Paleo and Keto mixes are also gluten free.  It is not displayed on the front of the package.  However when you look at the back there is a list of allergen related information  I did not like the mix labeled gluten free.  It is made with brown rice flour. The brown rice flour changes the texture and taste slightly.  My favorite mix is the Keto line.  It is light and fluffy and the mix does not have an after taste.

Working Remote Questions

Working Remotely comes with its own set of challenges, especially when social distancing.  While I do not miss my daily commute into NYC, I miss the opportunity to participate in the activities in my community.  I go to water exercise classes every morning. Now that the pool is closed I am missing my daily cardio workout.  I have received a couple of questions about working remotely and my routine.  The truth is that I really have not worked out the details of my work from home / work-life balance yet.

I am adjusting to this new world of working remotely daily and managing self distancing.  It is the new normal necessity for all, but it takes a bit of time to manage without anxiety and fear of doom ns gloom Here is my perspective on day 15 of working from home.
