I have recently become obsessed with beets! I changed beets from a childhood dislike into something that I love as an adult. I believe that my dislike had a great deal to do with the way they were prepared when I was a child. Beets were canned, placed in a pot and boiled and served at dinner time. There was no seasoning added. If you disliked beets trying preparing them different ways. Do not use the canned beets that were found in every household in the 70s and 80s. If you do not want to go through the long process of boiling, peeling and chopping fresh beets, you can purchase whole or chopped beets from stores such as Shoprite and Whole Foods. Serve them as a side dish hot or cold. Add beets to your favorite salad. In addition to adding a pop of color, they have a significant amount of nutritional value. Beets contain Vitamin C, Iron and Magnesium, and a very good source of Dietary Fiber, Folate, Potassium and Manganese. XOXOXOX Dawn
